Ginger is a plant with leafy stems and yellowish green flowers. The ginger spices comes from the rhizome or ginger root which is fibrous with a striated texture. The outer skin is brown in color while the inner flesh is white, yellow or reddish in color depending on the variety. Ginger is a native to warmer parts of Asia, such as China, Japan, and India, but now in parts of South America and Africa. It is also now grown in the Middle East to use as medicine and with food.
The world production of ginger in 2019 was 4.08 million metric ton. India is the world largest producer with 1.79 million metric ton, followed by Nigeria with 691,240 million metric ton. China is third largest producer with 581,140 metric ton and Nepal comes forth with 297,510 metric ton.
In Nigeria, ginger planting is done late in the dry season, or early wet season. And it is harvested at different times, depending on its usage. For processing into confectionery ginger products, it is generally harvested after 5 to 6 months of planting. Meanwhile, ginger for fresh consumption is generally harvested after 10 to 18 months after the leaves have died down. Ginger is used in foods and beverages as a flavoring agent. In manufacturing, ginger is used in production of alcohol and as fragrance in soaps and cosmetic. In pharmaceutical industry, ginger is used as an ingredient in laxative, anti-gas, and antacid and many other medications.
Our dried split ginger farmers are in various states in Nigeria, namely: Benue, Kaduna, Gombe, Nassarawa and Niger State.
